The hand-picked grapes are coded by vineyard, chilled in a cold room and selected by experienced cellar staff before whole-bunch pressing. Alcoholic fermentation is in temperature-controlled steel tanks, where the wines remain until the following March. Seven more months of aging are necessary for the wine to clarify, mature and disclose the character of its vineyard of provenance.
A standard bearer of the region, this wine always delivers. This cuvee opens with aromas of fresh and spiced baked apples, ginger flowers, and a hint of toast. The wine takes a more focused path on the palate with a mineral-driven approach with flavors of preserved lemon peel, Pink Lady apples and finishing with a crushed chalk minerality on the finish.
There's a succulent juiciness to the flavors of apricot, passion fruit and guava, balanced nicely by a minerally underpinning of chalk and saline, plus a swathe of chiseled acidity. Detailed hints of chamomile, beeswax, candied ginger and biscuit play on the creamy finish. Chardonnay, Pinot Nero and Pinot Bianco. Disgorged autumn 2024. This unoaked fizz has a really lovely lemon posset aroma, which continues in the mouth along with flavors of vanilla, cream and preserved lemons. A simple, but delicious, wine with plenty of vibrant freshness.
