Ao Yun Description

Ao Yun Cabernet Sauvignon is a remarkable wine that transports your senses to the breathtaking high-altitude vineyards of China's Yunnan province. This vintage showcases a masterful blend of 94% Cabernet Sauvignon, 4% Syrah, and 2% Petit Verdot, expertly crafted to deliver a complex, elegant, and unforgettable experience.

As you pour this wine, the bouquet comes alive, revealing a symphony of aromas that capture the wine's intensity and sophistication. The glass design further emphasizes the wine's silky, velvety texture, enticing you to take a sip and explore its depths.

On the palate, the Ao Yun glass harmoniously balances fruit, minerality, and freshness, allowing you to fully appreciate the wine's intricate flavor profile. You'll delight in the well-integrated notes of ripe blackcurrant, plum, and cherry, accented by hints of spice and earthy minerality, all wrapped in a subtle touch of oak, thanks to the use of fewer new barrels in this vintage.

The Ao Yun Cabernet Sauvignon culminates in a seamless, harmonious, and long finish that leaves you yearning for more. The optimal ripening conditions and meticulous blending process of this vintage ensure that each terroir contributes its unique character to create a truly exceptional wine.

Elevate your dining experience by pairing this captivating Cabernet Sauvignon with succulent roasted or grilled meats, like a tender filet mignon or herb-crusted lamb. The wine's depth and complexity also beautifully complement rich, savory dishes such as mushroom risotto or truffle-infused pasta.

Wine Enthusiast: 95 Points

This deep garnet colored wine is dense and perfumed on the nose, offering aromas of cassis, thyme and violet. It is bright at first sip, quickly followed by luxurious tannins that settle in quickly and back off, allowing bold acidity to reign. Lush fruit flavors of black cherry and dark plum are joined by notes of oregano, rosemary, lavender and thyme with a strong vein of minerality. Drink through 2034.

Wine Advocate: 93 Points

77% Cabernet Sauvignon, 20% Cabernet Franc, 4% Syrah and 2% Petit Verdot. It is deep ruby in color and has lifted herbaceous bramble and red and black plum fruit with subtle toasted new oak notes. There is significant concentration with robust alcohol but lifting acidity and ripe, fine-grained tannins. Very juicy, vinous and young!

Wine Advocate: 93 Points

This is a new blend for Ao Yun, with the 2016 vintage composed of 77% Cabernet Sauvignon, 20% Cabernet Franc, 4% Syrah and 2% Petit Verdot. It is deep ruby in color and has lifted herbaceous bramble and red and black plum fruit with subtle toasted new oak notes. There is significant concentration with robust alcohol but lifting acidity and ripe, fine-grained tannins. Very juicy, vinous and young! The 2016 Ao Yun doesn't have the immediate generosity of the 2015 vintage and will undoubtedly need time to develop in bottle. It will be more approachable from 2021. That said, if decanted in advance, it can already give pleasure. Notably, this was the first vintage winemaker Maxence Dulou decided to blend at sea-level, given that few consumers of Ao Yun will appreciate the wine at 2,600 meters in altitude. It will be fascinating to see how the 2016 evolves alongside the more voluptuous 2015 vintage.
