Christian Moreau Chablis 1er Cru Vaillon is a true reflection of the terroir's ancient secrets. Blessed with a south, south-east exposure on the left bank of the Serein River, this wine boasts an alluring, crystalline minerality that's intimately entwined with the kimmeridgien clay soil, peppered with the fossilized whispers of Exogyra virgula oysters.
Harvested by hand and crafted with precision, this Chablis unleashes a symphony of sensations. The pneumatic winepress and cool racking preserve the grape's purity, while natural yeasts weave their magic, creating a wine that is both generous and delicate. A masterful blend of 55% stainless steel vats and 45% oak barrels, aged for 8 months, delivers a harmonious fusion of fruit and minerality, balanced by a natural tartaric stabilization.
As you take your first sip, the vintage's early spring blossoms emerge, dancing playfully with the tension imparted by a hot, dry summer. A bouquet of ripe fruits and white flowers pirouettes across your palate, intertwining seamlessly with an undercurrent of classic Chablis minerality.
The Christian Moreau Chablis 1er Cru Vaillon is the ultimate partner for an array of gastronomic delights. Its vibrant acidity and refreshing mineral backbone make it a natural companion for the delicate flavors of seafood – think succulent oysters, pan-seared scallops, or butter-poached lobster.
This versatile Chablis also shines alongside poultry and white meats, creating a harmonious balance with dishes such as creamy chicken fricassee or tender veal piccata. And for a more unexpected pairing, consider serving it with a creamy mushroom risotto or a tangy goat cheese salad to amplify the symphony of flavors in each bite.
Broad and densely textured, with flavors of peach and apple, but mostly vanilla and lanolin from the oak. This is less expressive and focused than its peers yet shows staying power, echoing the oak spice on the finish. Best from 2027 through 2037. 150 cases imported.
The 2023 Chablis Vaillon 1er Cru has a vivacious, fliny nose that leaps from the glass. The palate is well balanced with a steely opening. Seductive lemon thyme and orange pith notes come through on the mid-palate, with a dab of ginger that enlivens the finish. The 2023 is very fine.
