Grapes were sourced entirely from Cabernet Sauvignon planted at our Paris Valley Ranch estate vineyard, located in the San Lucas AVA.
Cabernet Sauvignon develops ripe flavors and velvety tannins in the sunny rolling hills of inland Monterey County, away from the bay’s cold marine winds.
All of the wine was barrel aged in French and Hungarian oak barrels to marry the flavors and add hints of vanilla and spice.
| Tasting notes |
| Chalone Cabernet opens with dark fruit aromas, cassis, fragrant oak and a touch of black licorice. On the entry, the full-bodied fruit glides across the palate, layering rich blackberry and red stone fruit stitched with vanilla, oak and spice. The flavors linger through the finish, where they are met by fleshy tannins and good acidity. The rich body and well-balanced flavors of this wine pair nicely with dishes featuring good acidity. |
