Silver Cap is a blend of primarily Ugni Blanc & Chenin Blanc. Ugni Blanc adds citrus notes and brings a lovely acidity to our Blanc de Blancs. Chenin Blanc is fragrant with aromas of Granny Smith apples, honey, small white flowers, toasted brioche and hazelnuts. It has a beautiful acidity that makes for a balanced wine with great aging capacity. Silver Cap is tank fermented over a period of four months, giving it extremely fine bubbles while preserving its light, fruity side. Silver Cap is a blend of Ugni Blanc, Colombard and Chardonnay. Ugni Blanc adds citrus notes, enhancing the brut qualities of the wine. Colombard is a traditional French variety which has excellent acidity and beautiful floral aromas. Chardonnay, used widely in Burgundy and Champagne, contributes finesse and a smooth, rounded finish to the blend.
