The vines, ranging from 5 to 20 years in age, thrive in the decomposed granite soils of Clovelly and Tukulu. Cultivated through dry farming, the grapes develop depth and character, resulting in a truly exceptional wine.
Crafted with meticulous care, the handpicked grapes were crushed and left in contact with the skins for 12 hours to extract the essence of flavor. Following this, the juice underwent a long and cool fermentation in stainless steel tanks, ranging from 53.6 - 60.8°F, over three weeks. The wine was then aged on its lees in tank for approximately three months, enhancing its character and complexity.
On the palate, this Sauvignon Blanc entices with its refreshing and vibrant character.
