Truth or Consequences, N.M., is an unlikely place to make sparkling wine, but this blanc de noirs proves the Gruet family knew what they were doing when they planted their vineyards 4,300 feet above sea level. Among the highest in the country, they benefit from sunny days and chilly evenings. A blend of 75 percent Pinot Noir with the rest Chardonnay, the wine is aged a minimum of two years.
